Ingredients:
- 2 large overripe bananas, mashed (approx. 225g)
- 2 cups rolled oats (180g)
- 1 large egg (50g)
- 1/4 cup maple syrup (60ml)
- 1 tsp vanilla extract (5ml)
- 1 tsp baking powder (5g)
- 1 tsp ground cinnamon (2g)
- 1/4 tsp salt (1.5g)
- 1/2 cup dark chocolate chips (85g)
- 1/2 cup chopped walnuts (60g)
Instructions:
- Preheat your oven to 350°F (175°C). Mash the overripe bananas in a large bowl until smooth with only a few small lumps remaining.
- Whisk the egg, maple syrup, and vanilla extract into the mashed bananas until the mixture is fully emulsified and smooth.
- Stir in the baking powder, cinnamon, and salt.
- Fold in the rolled oats until no dry pockets remain, then gently fold in the chocolate chips and chopped nuts.
- Divide the batter evenly among 12 lined muffin cups, filling each about 3/4 of the way.
- Bake for 20 minutes until the edges are golden-brown and the tops spring back slightly when touched.
- Let the cups cool in the pan for 5 minutes before transferring them to a wire rack.
