Ingredients:

  • 2 large overripe bananas, mashed (approx. 225g)
  • 2 cups rolled oats (180g)
  • 1 large egg (50g)
  • 1/4 cup maple syrup (60ml)
  • 1 tsp vanilla extract (5ml)
  • 1 tsp baking powder (5g)
  • 1 tsp ground cinnamon (2g)
  • 1/4 tsp salt (1.5g)
  • 1/2 cup dark chocolate chips (85g)
  • 1/2 cup chopped walnuts (60g)

Instructions:

  1. Preheat your oven to 350°F (175°C). Mash the overripe bananas in a large bowl until smooth with only a few small lumps remaining.
  2. Whisk the egg, maple syrup, and vanilla extract into the mashed bananas until the mixture is fully emulsified and smooth.
  3. Stir in the baking powder, cinnamon, and salt.
  4. Fold in the rolled oats until no dry pockets remain, then gently fold in the chocolate chips and chopped nuts.
  5. Divide the batter evenly among 12 lined muffin cups, filling each about 3/4 of the way.
  6. Bake for 20 minutes until the edges are golden-brown and the tops spring back slightly when touched.
  7. Let the cups cool in the pan for 5 minutes before transferring them to a wire rack.
