  • 1 tsp vanilla extract (5ml)
  • 1 1/2 cups old-fashioned rolled oats (130g)
  • 2 tbsp chia seeds (15g)
  • 1/4 cup mini semi-sweet chocolate chips (40g)
  • 1/4 tsp ground cinnamon (1g)
  • 1/4 tsp fine sea salt (1g)

Instructions:

  1. Mash the banana in a medium bowl with a fork until smooth and liquid-like with no large lumps.
  2. Stir in the peanut butter and vanilla extract using a rubber spatula until the mixture is a uniform, creamy tan color.
  3. Fold in the rolled oats, chia seeds, cinnamon, and salt. Mix until the oats are fully hydrated and the dough becomes thick and heavy.
  4. Fold in the chocolate chips, ensuring they are evenly distributed throughout the batter.
  5. Scoop approximately 1 tablespoon of dough and roll between palms to create smooth spheres.
  6. Place balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes to set the texture.
