Ingredients:
- 1 medium ripe banana, mashed (120g)
- 1/4 cup creamy peanut butter (60g)
- 1 tsp vanilla extract (5ml)
- 1 1/2 cups old-fashioned rolled oats (130g)
- 2 tbsp chia seeds (15g)
- 1/4 cup mini semi-sweet chocolate chips (40g)
- 1/4 tsp ground cinnamon (1g)
- 1/4 tsp fine sea salt (1g)
Instructions:
- Mash the banana in a medium bowl with a fork until smooth and liquid-like with no large lumps.
- Stir in the peanut butter and vanilla extract using a rubber spatula until the mixture is a uniform, creamy tan color.
- Fold in the rolled oats, chia seeds, cinnamon, and salt. Mix until the oats are fully hydrated and the dough becomes thick and heavy.
- Fold in the chocolate chips, ensuring they are evenly distributed throughout the batter.
- Scoop approximately 1 tablespoon of dough and roll between palms to create smooth spheres.
- Place balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes to set the texture.
