Ingredients:
- 3 medium overripe bananas (approx. 1 ½ cups / 340g) mashed
- ½ cup (113g) unsalted butter, melted and slightly cooled
- ¾ cup (150g) brown sugar, packed
- 1 large egg (50g) room temperature
- 1 tsp (5ml) vanilla extract
- 1 ½ cups (190g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 1 tsp (2.6g) ground cinnamon
Instructions:
- Preheat oven to 375°F (190°C) and line a standard 12-cup muffin tin with paper liners.
- In a large bowl, mash the overripe bananas until they reach a smooth, liquefied consistency with only minimal lumps.
- Whisk in the melted butter, brown sugar, egg, and vanilla until the mixture is glossy and well-combined.
- In a separate medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Pour the dry ingredients into the banana mixture and gently fold the batter using a rubber spatula until no more streaks of dry flour remain.
