Ingredients:

  • 3 medium overripe bananas (approx. 1 ½ cups / 340g) mashed
  • ½ cup (113g) unsalted butter, melted and slightly cooled
  • ¾ cup (150g) brown sugar, packed
  • 1 large egg (50g) room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 tsp (5g) baking soda
  • ½ tsp (3g) salt
  • 1 tsp (2.6g) ground cinnamon

Instructions:

  1. Preheat oven to 375°F (190°C) and line a standard 12-cup muffin tin with paper liners.
  2. In a large bowl, mash the overripe bananas until they reach a smooth, liquefied consistency with only minimal lumps.
  3. Whisk in the melted butter, brown sugar, egg, and vanilla until the mixture is glossy and well-combined.
  4. In a separate medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
  5. Pour the dry ingredients into the banana mixture and gently fold the batter using a rubber spatula until no more streaks of dry flour remain.
