Ingredients:

  • 3 large overripe bananas, mashed (340g)
  • 1/2 cup (115g) melted unsalted butter
  • 3/4 cup (150g) brown sugar, packed
  • 1 large egg (50g)
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 425°F (218°C). Line a 12-cup muffin tin with liners.
  2. In a large bowl, whisk together the melted butter and brown sugar. Stir in the mashed bananas, egg, and vanilla until smooth.
  3. Sift the flour, baking soda, and salt directly into the wet mixture. Using a spatula, gently fold the ingredients together until no streaks of flour remain, ensuring not to overmix.
  4. Fold in 3/4 cup of the chocolate chips.
  5. Divide the batter evenly among the 12 cups and press the remaining chocolate chips onto the tops.
  6. Bake at 425°F (218°C) for 5 minutes, then immediately reduce the oven temperature to 350°F (175°C) and bake for another 12–15 minutes.
  7. Remove from the oven when a toothpick inserted into the center comes out clean or with just a few moist crumbs.
