Ingredients:
- 3 large overripe bananas, mashed (340g)
- 1/2 cup (115g) melted unsalted butter
- 3/4 cup (150g) brown sugar, packed
- 1 large egg (50g)
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Preheat your oven to 425°F (218°C). Line a 12-cup muffin tin with liners.
- In a large bowl, whisk together the melted butter and brown sugar. Stir in the mashed bananas, egg, and vanilla until smooth.
- Sift the flour, baking soda, and salt directly into the wet mixture. Using a spatula, gently fold the ingredients together until no streaks of flour remain, ensuring not to overmix.
- Fold in 3/4 cup of the chocolate chips.
- Divide the batter evenly among the 12 cups and press the remaining chocolate chips onto the tops.
- Bake at 425°F (218°C) for 5 minutes, then immediately reduce the oven temperature to 350°F (175°C) and bake for another 12–15 minutes.
- Remove from the oven when a toothpick inserted into the center comes out clean or with just a few moist crumbs.
