Ingredients:
- 3 large overripe bananas, mashed
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup sour cream
- 1 cup semi-sweet chocolate chips
- 1 tbsp all-purpose flour
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 2 tbsp heavy cream
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x13 inch pan or Bundt pan thoroughly with butter or cooking spray. In a small bowl, mash the bananas until smooth.
- Cream the softened butter and both sugars together for 2-3 minutes until pale and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract and mashed bananas.
- In a separate bowl, whisk the flour, baking soda, and salt. Alternately add the dry ingredients and the sour cream to the butter mixture, stirring until just combined; do not overmix.
- Toss the chocolate chips in 1 tablespoon of flour to prevent sinking, then gently fold the chips into the batter using a rubber spatula.
- Pour the batter into the prepared pan and bake for 30-35 minutes (for 9x13 pan) or 45-50 minutes (for Bundt pan) until a toothpick inserted in the center comes out clean.
- Prepare frosting by beating softened cream cheese and butter together, adding powdered sugar, vanilla, and heavy cream until smooth. Frost the cooled cake.
