Ingredients:

  • 3 large overripe bananas, mashed
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup sour cream
  • 1 cup semi-sweet chocolate chips
  • 1 tbsp all-purpose flour
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch pan or Bundt pan thoroughly with butter or cooking spray. In a small bowl, mash the bananas until smooth.
  2. Cream the softened butter and both sugars together for 2-3 minutes until pale and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract and mashed bananas.
  3. In a separate bowl, whisk the flour, baking soda, and salt. Alternately add the dry ingredients and the sour cream to the butter mixture, stirring until just combined; do not overmix.
  4. Toss the chocolate chips in 1 tablespoon of flour to prevent sinking, then gently fold the chips into the batter using a rubber spatula.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes (for 9x13 pan) or 45-50 minutes (for Bundt pan) until a toothpick inserted in the center comes out clean.
  6. Prepare frosting by beating softened cream cheese and butter together, adding powdered sugar, vanilla, and heavy cream until smooth. Frost the cooled cake.
