Ingredients:

  • 1 medium overripe banana, mashed (approx. 3 oz / 85g)
  • 1 tbsp melted unsalted butter
  • 1 tbsp maple syrup
  • 1/4 tsp vanilla extract
  • 3 tbsp all-purpose flour
  • 1/4 tsp baking powder
  • 1/8 tsp ground cinnamon
  • 1 pinch salt
  • 1 tbsp chocolate chips
  • 1 tsp blueberries

Instructions:

  1. Put the overripe banana in your mug. Mash it with a fork until it's smooth with only a few small lumps.
  2. Stir in the melted butter, maple syrup, and vanilla extract. Mix until the liquid looks uniform.
  3. Sprinkle the flour, baking powder, cinnamon, and salt over the banana mix. Note: Adding dry ingredients on top prevents clumps.
  4. Stir gently with the fork until the flour streaks disappear. Stop immediately to avoid a tough texture.
  5. Fold in the chocolate chips and blueberries.
  6. Place the mug in the center of the microwave.
  7. Cook on high for 90 seconds to 2 minutes until the top is set and springy to the touch.
  8. Let the cake sit for 1 minute. Note: The heat redistributes during this time, setting the center.
