Ingredients:
- 1 medium overripe banana, mashed (approx. 3 oz / 85g)
- 1 tbsp melted unsalted butter
- 1 tbsp maple syrup
- 1/4 tsp vanilla extract
- 3 tbsp all-purpose flour
- 1/4 tsp baking powder
- 1/8 tsp ground cinnamon
- 1 pinch salt
- 1 tbsp chocolate chips
- 1 tsp blueberries
Instructions:
- Put the overripe banana in your mug. Mash it with a fork until it's smooth with only a few small lumps.
- Stir in the melted butter, maple syrup, and vanilla extract. Mix until the liquid looks uniform.
- Sprinkle the flour, baking powder, cinnamon, and salt over the banana mix. Note: Adding dry ingredients on top prevents clumps.
- Stir gently with the fork until the flour streaks disappear. Stop immediately to avoid a tough texture.
- Fold in the chocolate chips and blueberries.
- Place the mug in the center of the microwave.
- Cook on high for 90 seconds to 2 minutes until the top is set and springy to the touch.
- Let the cake sit for 1 minute. Note: The heat redistributes during this time, setting the center.
