Ingredients:
- 2 cups (180g) rolled oats
- 1 scoop (30g) vanilla protein powder
- 1 tsp (5g) baking powder
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1.5g) salt
- 2 large (100g) ripe bananas, mashed
- 3/4 cup (180ml) unsweetened almond milk
- 1 large (50g) egg
- 1 tsp (5ml) pure vanilla extract
- 1/4 cup (30g) chopped walnuts
- 1/4 cup (40g) dark chocolate chips
Instructions:
- Place the rolled oats, protein powder, baking powder, cinnamon, and salt into a blender. Pulse until a fine, flour-like powder forms.
- Add the mashed bananas, almond milk, egg, and vanilla extract to the blender. Blend on medium speed until the batter is smooth and velvety.
- Pour the batter into a mixing bowl and gently fold in the chopped walnuts and chocolate chips using a spatula.
- Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish or line it with parchment paper.
- Pour the batter into the baking dish and smooth the top. Optionally, arrange sliced bananas on top.
- Bake for 30–35 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
