Ingredients:

  • 2 cups (180g) rolled oats
  • 1 scoop (30g) vanilla protein powder
  • 1 tsp (5g) baking powder
  • 1 tsp (2g) ground cinnamon
  • 1/4 tsp (1.5g) salt
  • 2 large (100g) ripe bananas, mashed
  • 3/4 cup (180ml) unsweetened almond milk
  • 1 large (50g) egg
  • 1 tsp (5ml) pure vanilla extract
  • 1/4 cup (30g) chopped walnuts
  • 1/4 cup (40g) dark chocolate chips

Instructions:

  1. Place the rolled oats, protein powder, baking powder, cinnamon, and salt into a blender. Pulse until a fine, flour-like powder forms.
  2. Add the mashed bananas, almond milk, egg, and vanilla extract to the blender. Blend on medium speed until the batter is smooth and velvety.
  3. Pour the batter into a mixing bowl and gently fold in the chopped walnuts and chocolate chips using a spatula.
  4. Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish or line it with parchment paper.
  5. Pour the batter into the baking dish and smooth the top. Optionally, arrange sliced bananas on top.
  6. Bake for 30–35 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
