Ingredients:

  • 2.5 cups all-purpose flour
  • 1 cup unsalted butter, chilled and cubed

  • 1 tbsp granulated sugar
  • 8 tbsp ice water
  • 3 lbs Granny Smith or Honeycrisp apples, peeled and sliced 1/4 inch thick
  • 1/3 cup light brown sugar
  • 1 tbsp ground cinnamon
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch
  • 1/4 tsp ground nutmeg
  • 1/2 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/4 cup cold butter, cubed
  • 2 tbsp maple syrup

Instructions:

  1. Combine flour, salt, and sugar in a bowl. Cut in the chilled butter until the mixture resembles coarse crumbs with some pea-sized lumps. Gradually add ice water, one tablespoon at a time, stirring until the dough just holds together. Shape into a disk, wrap in plastic, and chill for 30 minutes.
  2. In a large bowl, toss sliced apples with lemon juice, cinnamon, nutmeg, cornstarch, and brown sugar. Let the mixture sit for 10 minutes to release natural juices.
  3. Preheat oven to 375°F (190°C). Line a 10x15-inch rimmed baking sheet with parchment paper. Roll the chilled dough into a rectangle roughly 12x16 inches. Gently transfer the dough to the pan, pressing it slightly up the sides.
  4. Pour the apple mixture over the dough, spreading the slices in overlapping rows.
  5. Pinch the oats, flour, butter, and syrup together to create a crumble and sprinkle evenly over the top. Bake for 45-50 minutes until the crust is deep golden brown and juices are bubbling.
