Ingredients:
- 3 cups (360g) almond flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) sea salt
- 1 tsp (2g) ground cinnamon
- 3 large (300g) extra-ripe bananas, mashed
- 3 large eggs, room temperature
- 1/3 cup (80ml) maple syrup
- 1/3 cup (80ml) coconut oil, melted
- 1 tsp (5ml) vanilla extract
Instructions:
- Preheat the oven to 350°F (175°C). Line a 9x5 inch loaf pan with parchment paper and grease the remaining edges with coconut oil.
- In a large bowl, mash the bananas until smooth, leaving a few small lumps for texture.
- Whisk in the eggs, maple syrup, melted coconut oil, and vanilla extract until the mixture is fully combined and glossy.
- Sift in the almond flour, baking soda, salt, and cinnamon. Gently fold the dry ingredients into the wet batter using a rubber spatula until just combined.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 45–55 minutes, or until the edges pull away slightly from the pan and a toothpick inserted into the center comes out clean.
