Ingredients:
- 2 lbs sweet potatoes, peeled and cut into 1-inch cubes
- 2 tbsp extra virgin olive oil
- 1 tbsp pure maple syrup
Instructions:
- Preheat your oven to 400°F (200°C) and line a large rimmed sheet pan with parchment paper.
- Peel the sweet potatoes and dice them into uniform 1 inch cubes.
- Toss the sweet potato cubes in a large mixing bowl with the olive oil and maple syrup until every surface is glistening.
- Spread the potatoes in a single layer on the pan, ensuring they do not touch to maximize airflow.
- Roast for 17 minutes until the bottom side starts to brown.
- Flip the potatoes using a spatula.
- Roast for another 18 minutes until the edges are mahogany colored and the centers feel tender when pierced with a fork.
- Remove from the oven and let them rest for 2 minutes on the pan to set the glaze.
